Our Speck is the pork outer round that has been seasoned with sea salt, red wine, black pepper, and juniper berry. It is cold smoked in sessions over the drying time, and is smoked for a minimum of 32 hours. Sold by the half piece, which averages 2.25-3.50 lbs per piece.
